Spring time is the perfect setting for dinner parties and outdoor events. If you'd like to step up your appetizer game from your standard grocery store fruit platter I can help. Below are three different hors d'oeuvres that are a guaranteed crowd pleaser.



Smoked Salmon with Avocado Mousse Cups


Ingredients

  • 2 ripe avocados, peeled and pitted

  • 1/4 cup sour cream

  • 2 ounces smoked salmon

  • 1 box (15 count) mini fillo (phyllo) shells, thawed

  • 3 chives, roughly chopped

  • Salt, Pepper, Garlic powder, pinch of cayenne 


  • In food processor, puree avocados and sour cream until smooth. Season to taste

  • cut salmon into small squares or pieces.

  • Use a star-tipped piping bag to pipe avocado mixture into phyllo shells, or use a small spoon to scoop it in.

  • Top each phyllo shell with a piece of smoked salmon and chopped chives



Stuffed Cucumber with Cheese and Bacon


INGREDIENTS

  • 5-6 long cucumbers

  • 1 package boursin garlic herb cheese

  • 1 container sour cream

  • 2 TBS fresh

  • 1 TBS diced yellow onion

  • 1 TSP Celery Salt

  • 6-10 strips bacon - thick cut - crumbled


INSTRUCTIONS

  1. Cook bacon and crumble 

  2. Combine the dill , minced , celery salt, cream cheese, sour cream and half of the bacon crumbles

  3. Peel / Stripe cucumbers and slice into about 1 inch pieces

  4. Using a melon baller or spoon scoop out the center and seeds of the cucumber

  5. Place filling in a pastry bag or ziplock and fill each cup

  6. Garnish with remaining crumbled bacon



Watermelon, Feta, & Mint Skewers 


Ingredients:

  • 1 small seedless watermelon

  • One package feta cheese, cut into cubes

  • Fresh mint leaves

  • Balsamic glaze (for drizzling)

  • Bamboo skewers

  • Fresh Sea Salt


  1. Cut the watermelon into 1-inch cubes. You can use a melon baller or cookie cutter to create uniform shapes if desired.

  2. Place the watermelon cubes on a paper towel-lined plate to absorb excess moisture. This step helps prevent the skewers from becoming too watery.


  1. Take a bamboo skewer and thread one watermelon cube onto it.

  2. Follow with a cube of feta cheese.

  3. Add a fresh mint leaf on top of the feta.

  4. Repeat this process until the skewer is filled, leaving a small space at the top for easy handling.


  1. Arrange the watermelon, feta, and mint skewers on a serving platter.

  2. drizzle balsamic glaze over the skewers for a tangy contrast 

  3. Sprinkle Sea Salt over top

These skewers are perfect for summer gatherings and outdoor parties. Enjoy the combination of sweet watermelon, salty feta, and refreshing mint!
