Smoky Kansas City BBQ Pork Skewers with Pineapple


With the Kansas Chiefs Back in action we need something that can satisfy a tailgate crowd! These BBQ pork skewers with pineapple bring together the rich, smoky flavors of Kansas City barbecue and the sweet, tangy goodness of fresh pineapple. Perfect for an end of summer cookout or a cozy dinner, these skewers are sure to impress. Here’s how to make them!


Ingredients:

For the Marinade:

  • 1 cup Gates BBQ sauce

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons honey

  • 1 tablespoon soy sauce

  • 1 tablespoon Dijon mustard

  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon black pepper


For the Skewers:

  • 1 1/2 pounds pork tenderloin or pork loin, cut into 1-inch cubes

  • 1 fresh pineapple, peeled, cored, and cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 yellow bell pepper, cut into 1-inch pieces

  • 1 large red onion, cut into 1-inch pieces

  • Olive oil, for brushing

  • Salt and black pepper, to taste


For Garnish :

  • Fresh cilantro, chopped

  • Fresh Green Onion - chopped

  • Lime wedges


Instructions:

  1. Prepare the Marinade:

    • In a medium bowl, whisk together the Gates BBQ sauce, apple cider vinegar, honey, soy sauce, Dijon mustard, minced garlic, smoked paprika, ground cumin, and black pepper. This combination will give your pork skewers a rich, smoky flavor with just the right hint of sweetness.


  2. Marinate the Pork:

    • Place the pork cubes in a large resealable plastic bag or a bowl. Pour about 1 cup of the marinade over the pork, reserving the rest for basting and serving. Seal the bag or cover the bowl, and refrigerate for at least 1 hour, or preferably overnight. The longer you marinate, the more flavorful the pork will be!


  3. Prepare the Skewers:

    • Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

    • Thread the marinated pork cubes, pineapple chunks, red bell pepper pieces, yellow bell pepper pieces, and red onion pieces onto the skewers, alternating between each ingredient.


  4. Grill the Skewers:

    • Brush the grill grates with olive oil to prevent sticking. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the pork is cooked through and has an internal temperature of 145°F (63°C) and the vegetables are tender with slight charring.

    • While grilling, brush the skewers with the reserved marinade to add extra flavor and keep them moist.

  5. Serve:

    • Once done, remove the skewers from the grill and let them rest for a few minutes. Season with a little salt and black pepper.

    • Garnish with chopped fresh cilantro, green onion and lime wedges.

  6. Enjoy:

    • Serve these BBQ pork skewers with your favorite side dishes, like coleslaw, corn on the cob, or a potato salad. They make a great centerpiece for any summer meal or backyard BBQ.
